twig boy cooks – wholemeal pitta breads
Little brown tears of wonder. Wholemeal pitta breads.
Ingredients. Makes 4. Preparation time – up to 3 1/2 hours. Cooking time – 5 – 10 minutes.
125g white flour
125g wholemeal flour
1 tsp salt
1 1/2 tsp instant yeast
2 tsp olive oil
up to 160ml warm water
extra flour for dusting
ONE. Add your flours to a bowl along with the salt and yeast. Mix them together and then add your oil and about 100 ml of water. Give them another good mix.
TWO. You should be getting a soft sticky dough all over your hands at this stage. If not, add another splash of water and repeat the mixing process. Now you should have your soft and sticky dough.
THREE. Flip the dough out of your bowl onto a clean, lightly floured surface. Knead for about 8 minutes until your dough is less ‘soft and sticky’ and more ‘smooth and silky’. When you have achieved this magical consistency, put it into an oiled bowl, cover with a tea towel and leave somewhere warm-ish.
FOUR. In 1 – 3 hours time your dough should have doubled in size, knock it back, shape into pitta bread shapes (a bit like a giants tears in case you don’t know) and cook in the middle of an oven at 220 degrees for 5 – 10 minutes.
