Yes, brunchfast is now a word, it’s not breakfast, it’s not brunch, it’s simply brunchfast. This lazy food is pretty great if you’re not in the mood for anything specific but are still a bit hungry. Today that was me, I was also feeling lonely, lazy and a bit fat so I figured ‘yeah, why not’. It also makes pretty great camping food and works well with hangovers.

Ingredients. Serves 1 (lonely). Prep time – 5 minutes. Cooking time – 30 minutes.
1 potato
1/2 onion (optional)
1 or 2 eggs (depends on how fat you are feeling)
Some parsley, salt, pepper and paprika/chilli
2/3 tbsp of olive oil

Method.

ONE. Wash your potato and cut into small cube shapes, you can make chips if you like, it doesn’t really matter. Parboil for about 5 minutes until they are just turning soft to a fork. Drain and put to one side to steam dry for a minute or two.

TWO. Whilst your potatoes are drying, chop the onion if you are using it, you should finely slice it for maximum wonderment. Next, dry your potato shapes with some kitchen towel, heat the oil to a low/medium heat and put it all in together. Stir, season, stir again.

THREE. Your potato shapes will take about 20/25 minutes to cook (the lazy part). Make sure you keep an eye on your potato, I like crispy edges but you might not.
N.B. My potato shapes broke up here. Oops. Next time I will use smaller potato shapes.

FOUR. When your potato is cooked to your taste create a few spaces in the bottom of your pan and crack in your eggs, cook until the egg is how you like it, sprinkle with some salt, pepper, paprika or chilli powder. Chop your parsley and toss that in too. It looks pretty. Remove from the pan anyway you can and serve up right away.

Well, pretty is a subjective term.
