twig boy cooks – purest green cauliflower and broccoli soup
‘Oh, Edmund… can it be true? That I hold here, in my mortal hand, a bowl of purest Green?’
Enjoy this souper duper warming bowl of green goodness if you are cold or sad. Or both. Works well with other temperatures and emotions. I was genuinely chilly and melancholic mind.
Ingredients. Serves – 2. Preparation time – 10 minutes. Cooking time – 30 minutes.
1 large onion
1 clove of garlic
400ml vegetable stock
1 tbsp oil
ONE. Put a large saucepan on your hob, add your oil and light the flame. Let it heat up. Chippity chop the onion and garlic (roughly is fine, you won’t win prizes for neatness here) and add them to the pan. Sprinkle with a touch of salt and pop a lid on it. Let them do their thing but make sure they don’t burn. Now chippity chop the cauliflower and broccoli.
TWO. When the onion and garlic have softened and are a bit see-through* add your cauliflower and broccoli, it’s important to note here, the more broccoli, the greener your soup.
*Inclusive of all see. Most cooks would have used translucent there. twig boy = for the many, not the few.
THREE. Add the stock to the veg, throw in a bit of white pepper and put the lid back on. Cook for about 20 minutes or until the vegetables are soft. Consider using this time to attempt a Sudoku puzzle or knit a mitten. Keep yourself busy. We all know that the devil will find work for idle hands.
FOUR. Use your trusty stick blender and blend. Watch out for hot soup splatters. They burn. When blended, serve with some nice bread.
