twig boy cooks – popcorn ficken nuggets
I used to work in a cinema with a lot of popcorn,
I used to be a carnivore who ate a lot of meat nuggets,
I have been told that sometimes I can be a bit of a ficker.
Today I combine those 3 seemingly unconnected truths about my life and bring to you quite possibly the greatest vegan fast food I have ever eaten/made/been in the same room as.
Ingredients. Serves – probably more than 1, I ate all of mine though. Myself. Prep time 25 minutes. Cooking time – 5 minutes.
2 cups dried soya chunks
1 garlic clove, mashed with your hand
3 cups vegetable stock, I used 1/2 cube
spring water, still water or even beer, enough to make a batter with
1 thumb of ginger, peeled and finely grated
1/2 cup white flour
1 1/2 cup of breadcrumbs, you can make them or you can be clever and buy them
zest of 1 lemon
ONE. Put the soya chunks, the hand mashed garlic and the grated ginger in a large bowl. Cover the soya with your vegetable stock and leave it to rehydrate like a drunk on a Sunday morning. This should take about 20 minutes.
TWO. Whilst your soya is coming up you can get on with the rest of your delicious snack. Take a large ziplock bag and put into it the breadcrumbs, salt, pepper, lemon zest and maybe a hint of chilli if you like things a little spicy.
THREE. Your soya should be ready and raring to go now. Remove it from the broth and drain. Once it is dry, use kitchen paper to remove any extra moisture from the soya chunks. Be careful, you don’t want to squash them.
FOUR. Empty the stock from the bowl (you can reuse it if you like but meh, that’s not how twig boy works). Make a batter in your bowl by using your spring water, still water or beer and your flour. It’s silly trying to give solid amounts here because it’s almost impossible for me to know how your batter will work and I rarely weigh out the flour and beer before I get stuck in. Just go with your gut*. You want it quite thick so er on the side of less liquid, more flour. Whisk together until you have a lump-free mixture.
N.B. If you have been using twigboy cooks at all you may have noticed your gut maybe getting a little larger. Whilst we accept no responsibility for this, we are working on some ‘just as tasty but also, a lot healthier’ meals. I will be putting the chip pan away.
FIVE. Dip the soya nuggets into the batter mixture and then place inside your ziplock bag (the one with the spices). When half of your nuggets are in the bag, zip the lock and give it a shake, empty them from the bag and place to one side. You may need to top up your breadcrumbs before you coat the second batch. Once all of your nuggets are good to go, get ready to fry them. Technically, you could bake them now but nah. That’s not as good.
SIX. Deep fry your ficken nuggets for about 5 minutes until they are golden brown and gorgeous…
SEVEN. Drain your ficken nuggets and get stuck in. Serve with a salad (if you like) and a dip of your choice.
