twig boy cooks – less risk of diabetes than your average internet recipe lemon and lime squash concoction
All of this cooking and typing is incredibly thirsty work. You need something nice and refreshing to take the edge off and unfortunately, sometimes it is just too early in the day for a proper drink. What is there to do?! Fear not friends. For there is a (fairly) healthy alternative that is a lot more exciting than a cup of tea. Today twig boy cooks (in an incredibly loose sense of the word) lemon and lime squash.
A lot of the recipes you see elsewhere for such a refreshing drink as this will call for nearly 2 cups (that’s TWO) of sugar. To me, and hopefully to you, that sounds ridiculous, 2 cups is an insane amount of sugar for a drink and you shouldn’t be going anywhere near that. This recipe uses 1/3 of a cup of sugar (still a fair bit to be honest) and in my humble opinion is every bit as good if not better. So, without further ado, here is twig boys ‘less risk of diabetes than your average internet recipe’ lemon and lime squash concoction.
Ingredients. Serves 6-ish.
1/3 cup of sugar
1/4 cup of water
water to dilute to taste
ice, fruit slices, little umbrellas to serve
ONE. Put the water and sugar into a saucepan and bring to a boil. Stir until all of the sugar is dissolved and then remove from the heat. Allow to cool and then pop into the freezer for 30 minutes until cool.
TWO. Using a hand juicer, juice (obviously) the lemons and lime. Remove any pips but keep all the bits of pulp you can, they a bring a lot of flavours.
THREE. Add the lemon and lime juice (pulp included) to your sugar syrup and dilute with water to taste (you’ll probably need a fair bit depending on how much juice you get from your fruits). This can be a right lip curler if you’re not careful.
FOUR. Garnish any way you choose with your ice, fruits and little umbrellas. It also works very well with gin.
